Organoleptic features
The Brunello 1980 still evidences a good colour. The perfume has an aromatic profile of great consistency in which the primary odours of the grape variety and the secondary flavours, fermentation derived, are being replaced by an odorous blend of more noble and complex nuances. The intake is marked by a pleasant savoury taste, mature and sweet at the same time. The alcohol content is certainly high but well matched with adequate acidity. At the moment, the great roundness of polymerised tannins makes this wine very interesting and a real promise of longevity.
Climatic course The season's course was generally very regular. During summer time, temperatures were slightly cooler then the season's mean values and rainfalls were scarce. During autumn, the weather remained sunny and the absence of precipitation favoured the perfect maturation of the grapes, which were completely healthy.
Vinification Harvest took place during the last days of October. The skins and their polifenolic patrimony were of great value and the sugar content was very high, allowing thereby maceration to last for 20 to 22 days.
Ageing The ageing of the wine started at the end of December in Slovenian oak casks, where its polifenolic equilibrium improved for forty-two months.
